Every October, food lovers can look forward to the Malaysian International Gastronomy Festival (MIGF) – one of the region’s most celebrated food events – which returns this year with its 16th edition. Themed High Octane Chefs, dozens of restaurants will showcase specially crafted menus throughout the month, with a variety of cuisine such as Western, International, Asian, Thai, Chinese, Cantonese, Japanese, Peranakan and more.
Among the restaurants in the festival’s line-up are Resorts World Genting’s The Olive Restaurant and Bar Lounge at Genting Grand, and LTITUDE Restaurant, Bar and Lounge at Genting Club, Expect the finest dishes as their top chefs put their best foot forward to bring diners on a memorable culinary journey.
LTITUDE Restaurant, Bar and Lounge
Drawing from her classical French training and combining it with modern cooking techniques, the young and talented Chef Mandy Goh promises an unforgettable fine-dining experience at LTITUDE – with texture and flavour taking centerstage on her menu. Kick off the meal with canapes of wafer-thin flat bread, Sturia caviar and lemon mascarpone topped with cherry ragout. The menu’s amuse bouche features garden of greens vs wild mushroom tea, with petit pois, baby leeks, truffle brioche and hollandaise.
For starters, fat and juicy sweet Hokkaido scallops go with Romanesco cabbage and mint snow for a fresh and minty flavour. This is followed by purple artichoke soup with black truffle and albali white wine, which has been simmered for four hours for maximum flavour. Moving on to appetizers, organic egg is cooked to perfection at 62 degrees, topped with sweet Iberico ham on a bed of butternut squash foam.
Tuck into wild caught French sea-bass as your main course, paired with Swiss chard and a light and frothy vanilla foam, before cleansing your palate with Couer de Boeuf, a light and refreshing sorbet of heirloom tomato and plum granite on a bed of dry ice. For the mains, Iberico spare ribs are marinated in salt, pepper and barbecue sauce before slow cooking for four hours and grilled for good measure to get a good crisp on the fat. The dish is served with a side of Bluefoot mushroom and Charlotte potatoes.
To round off the meal, there is textures of blood orange terrine, sorbet and a soft panna cotta, followed by 70% Guanaja souffle and Valrhona chocolate. LTITUDE’s festival menu is priced at RM288 nett per pax and RM448 nett (with wine pairing).
Over at The Olive Restaurant Bar and Lounge, Chef Mohamad Radzuan spearheads the festival menu this year. Enjoy Western Continental cuisine with an amuse bouche of sea urchin mousse, infused with pineapple, cucumber basil and bottarga; as well as an appetizer of lobster carpaccio with hot salt, lemon zest, orange, basil and cilantro cress.
Start off with pan-fried risotto with creamy wild mushroom and sundried tomato, garnished with Italian parsley and truffle. Then sip on warm hearty soup of smoked tomato essence, cucumber, roasted onion, caviar and cod. For the main course, enjoy noisette of lamb on a bed of polenta, lentil, eggplant puree, carrot, cauliflower and artichoke. The meat is perfectly pink on the inside and comes served with mint ice-cream, a departure from regular mint sauces.
End the meal on a sweet note with dessert: fleur de sel caramel apple, lavender marshmallow, panna cotta, chocolate bar, creme brulee and pomegranate glee. The Olive’s festival menu is priced at RM298 nett, and RM488 nett (with wine pairing).
